Bring the tropics inside with this recipe: Bajan Macaroni Pie

Got cabin fever? We know this can be particularly difficult for those of us who love to travel. But the good news is you can obey quarantine measures while keeping your wanderlust alive by recreating travel memories at home until the world of travel returns to normal. For instance, now is a great time to perfect a recipe from around the world from the safety of your kitchen. To help you get started, here is a recipe from sunny Barbados for you to try at home.


Bajan Macaroni Pie

While indoors, no one will blame you for indulging in comfort foods. And there’s no greater comfort food (outside of dessert, that is) than Bajan macaroni pie. This isn’t your regular mac and cheese out of the box. It’s an upgraded, baked version that includes liberal amounts of cheddar cheese, salt and pepper, plus ketchup and mustard.


So feel free to turn up the heating and envision yourself in Barbados while making this recipe. Here’s what you’ll need:

  • 8 oz long tubed macaroni (elbow macaroni will work just as well)
  • 4 cups of grated cheddar cheese
  • 1 ½ cups of milk
  • 1 cup of water
  • 1 onion
  • ⅓ cup of ketchup
  • 1 tbsp. mustard
  • 1 beaten egg
  • Salt and pepper to taste


Directions:

Boil slightly salted water in a medium saucepan and then add the macaroni. Add a few drops of oil to keep the saucepan from bubbling over and to keep the macaroni separated from each other. Remove saucepan once the macaroni is fully boiled but still a bit firm (remember you don’t want the macaroni to get too soft because you still have to bake it in the oven)


Now is a good time to preheat the oven to 350F. While the oven is heating up, use a colander to remove the excess water from the macaroni. Once all of the water is drained, return the macaroni to the saucepan and add the cheddar cheese. Add all of the remaining ingredients and stir well. Pour mixture into a greased baking dish and pop it into your preheated oven for about 40 minutes, remembering to check on it often.
